If you enjoy BBQ this is a great way to have that delicious BBQ flavor and enjoy all the goodness of veggies. This recipe is really tasty, and for sure I will make this recipe again. Full of the goodness of yellow summer squash and zucchini that are abundant in the markets right now and inexpensive. And this recipe is wonderful for the meat lovers in your crowd—I Promise They Will Love It!
Another Whole-Foods Plant Based Recipe
5 - 10 oz packages of Organic BBQ Flavored Jackfruit - You can find this at your local health food store. This is green jackfruit that has been cooked in BBQ sauce and it's wonderful. You can also make your own if you have jackfruit around, just cooked the green fruit in BBQ sauce. Green jackfruit has the consistency of meat when cooked... and meat loves are not able to tell the difference - REALLY.
3 - Medium Organic Yellow Squash - Chopped
3 - Medium Organic Zucchini - Chopped
1 - Large Organic Yellow Onion
2 - 12 oz Package of Organic Protein - Organic Soy Protein as Tofu or Pea Base Protein.
5 - Cups of Organic Brown Rice - Cooked
4 - Cups of Organic Black Beans - Cooked
2 - 10 oz Bottles of Organic Low Sodium BBQ Sauce
18 - Cloves of Organic Garlic - Minced
4 - Tablespoons of Organic Garlic Powder
1 - Organic Tomato - Sliced
Salt and Pepper to Taste
First, sauté the onions and garlic in a little bit of water until translucent. Then, in a 9-inch by 16-inch deep baking pan place a layer of yellow squash and zucchini and the cooked onions and garlic. Then add the garlic powder and salt and pepper to taste. Then take the veggie protein and add salt, pepper, and some of the garlic powder and mash it up and place that over the squash.
Now add a layer of BBQ flavored Jackfruit and then a layer of brown rice. Next, add the black beans and pour on the BBQ sauce. Now, place a few slices of tomato on top as a garnish. If you want more BBQ flavor then add some more BBQ sauce.
Next, place in a 400-degree oven for 75 minutes or until things start to get a little brown on top.
Remove from the oven, let cool, slice and serve.
Serves 16 people.
You can cut this recipe in 1/2 or 1/4 depending on your household.
This recipe has become one of my favorite... I will make this again... perhaps even for Father's Day coming up.
